Poach the chicken
Bring a large pot of water (enough to submerge the chicken) to a boil with ginger, scallions, and cooking wine. Submerge the chicken breast-side down. Bring back to a boil, then reduce heat to the lowest simmer (barely bubbling) and cook covered for 30 minutes. Turn off the heat and let the chicken sit in the hot water for another 20 minutes — this gentle cooking keeps the meat tender.
Ice bath
