Make the Filling
Mix ground pork, chopped shrimp, ginger, soy sauce, sesame oil, and white pepper. Stir in one direction until paste-like.
Wrap the Wontons
Place a teaspoon of filling in the center of each wrapper. Fold into a triangle, then bring the two corners together and pinch with water to seal.
Make the Broth
Simmer chicken stock with ginger slices, a splash of Shaoxing wine, and white pepper for 10 minutes. Season with salt.
Cook the Wontons
Drop wontons into boiling water. When they float, cook 2 more minutes. Transfer to serving bowls with the hot broth.
Garnish
Top with finely sliced scallions, a drizzle of sesame oil, and a sprinkle of white pepper. Serve piping hot with chili oil on the side.
