Cook the mushroom topping

Heat oil in a wok over medium heat. Add the chopped mushrooms and stir-fry for 3-4 minutes until they release their moisture and start to brown. Add the crushed peanuts/cashews, soy sauce, and sugar. Continue cooking for 2-3 minutes until everything is well-coated and slightly crispy. Set aside.

Mix the sauce (in each serving bowl)

In the bottom of each bowl, combine the sesame paste, chili oil, soy sauce, vinegar, Sichuan pepper powder, sugar, salt, and warm water. Stir until smooth — the sauce should be thick but pourable. Adjust to taste (more chili oil for heat, more vinegar for tang).

Cook the noodles and greens

Boil the noodles according to package directions. In the last minute, add the bok choy or spinach to blanch. Reserve ¼ cup noodle water before draining.
