Ingredients You'll Need
The Tofu
- 1 block silken tofu, cut into 2cm cubes
- 1 tsp salt
- Boiling water for blanching

- 1 tsp cornstarch + 2 tbsp water
- 2 tbsp cooking oil
- 2 scallions, chopped
📝 Instructions
Blanch the tofu
Blanch tofu cubes in salted boiling water for 2 minutes. This firms them up so they don't break during cooking. Drain gently.
Build the sauce base
Heat oil in a wok over medium heat. Add the diced mushrooms and stir-fry until they release their moisture and brown slightly (2-3 minutes). Add doubanjiang and fermented black beans — fry for 1 minute until oil turns red.
Add aromatics and liquid
Add ginger and garlic, stir 30 seconds. Pour in the mushroom liquid and bring to a simmer. Add soy sauce and sugar.
Add tofu and simmer
Gently slide in the tofu cubes. Simmer for 3-4 minutes — do not stir aggressively. Gently shake the wok to move the tofu. The tofu absorbs the sauce.
Thicken and finish
Add cornstarch slurry and gently fold. The sauce should coat the tofu in a glossy glaze. Add Sichuan pepper powder and scallions. Serve over rice.
