Must-Have Equipment

From carbon steel woks to bamboo steamers — the essential tools for authentic Chinese cooking at home. You don't need much, but the right tools make a huge difference.

The Essentials

Carbon Steel Wok (14")

The cornerstone. Carbon steel heats fast, seasons naturally, and lasts forever. Flat-bottom for electric stoves, round-bottom for gas. Never buy non-stick — it can't handle wok temperatures.

Chinese Cleaver

One knife for everything: slicing, dicing, mincing, smashing garlic, and scooping ingredients. Light, thin, and versatile — not the heavy bone chopper you might imagine.

Wok Spatula (Chan)

Curved metal spatula that matches your wok's shape. Essential for tossing, scooping, and scraping.

Large Cutting Board

A big wooden board gives you room to prep multiple ingredients without constant clearing. Chinese kitchens often use round wooden blocks.

Nice to Have

Bamboo Steamer (10-12")

For dim sum, steamed fish, and vegetables. Bamboo absorbs moisture so food doesn't get soggy. Fits inside your wok.

Clay Pot / Sand Pot

For slow-cooked soups and clay pot rice. Retains heat beautifully and imparts subtle earthy flavor.

Spider Strainer

Wide mesh scoop with bamboo handle for blanching, frying, and retrieving dumplings.

Rice Cooker

Not traditional, but incredibly convenient. Perfect rice every time with zero attention. Zojirushi or Cuckoo are the gold standards.

Mortar & Pestle

For grinding toasted Sichuan peppercorns and making fresh spice blends. A granite one is best.

💡 Pro Tips

  • 1.Season your carbon steel wok before first use — heat it, rub with oil, and repeat until dark. This creates a natural non-stick surface.
  • 2.Never put your wok in the dishwasher. Wash with hot water and a bamboo brush, dry immediately, and rub with a thin layer of oil.
  • 3.A Chinese cleaver is much thinner than a Western cleaver — it's for slicing, not chopping bones.
  • 4.If you only buy one thing beyond a wok, make it a good wok spatula. The right tool transforms your stir-frying.
  • 5.Visit a Chinese grocery store for equipment — prices are often half of Amazon and you can feel the quality.
